PRINCESS ANNE ? Where there's smoke, there's ham - or there ought to be.
Long before Capt. Arthur Smith IV established Smithfield, Princess Anne County farmers were smoking and salting pork to preserve it. Nearly every family in the county raised at least a few hogs, and 60 years ago, almost every farm in the county still had a smokehouse.
Cal Schiemann, Virginia Tech's agricultural Extension agent in Virginia Beach, feared the production of smoke-cured hams was a local practice that would be forgotten.
