Aug. 17--McKINNEY, Texas-In an area known for its cattle and cotton fields, John Wales is staking his fortune on cabernet sauvignon grapes.
The owner of Wales Manor Vineyard, just east of New Hope, spent 21 hours last Monday harvesting more than 5 tons of Collin County's newest hot commodity.
And just an hour after the harvest started, Mr. Wales, 43, began producing a batch of local wine.
"You've got to taste this stuff. It's amazing," Mr. Wales said as he sampled the crushed, stemless mush from a 1,500-gallon stainless steel fermenting tank. "It's ...
