On opening day in late May in West Nyack, N.Y., thousands of curious customers waited in long lines to experience the newest restaurant in town: The Cheesecake Factory. The combination of decor items--Egyptian columns, hand-blown lighting fixtures, dark cherry-wood furnishings, brass accents and colorful, hand-painted murals--and a selection of nearly 200 menu items gave diners a compelling reason to check out the concept. Several weeks later, in mid-July, repeat and new customers were still willing to wait for up to four hours for a table at this eclectic 355-seat restaurant during peak meal hours.
