As microwave ovens moved into the mainstream, the popularity of microwave popcorn exploded. Now about 80% of popcorn sales come from microwave varieties, according to Frost & Sullivan, New York City.
The expanding demand for new microwave popcorn products brought to the forefront the need for heat-stable cheese.
