In response to Joan A. Gallo's request for a coconut cake recipe from a Baylor University Alumni Association cookbook, several readers came to the rescue. Apparently two different coconut cake recipes have appeared in two different Baylor Alumni Association cookbooks over the years. Both renditions are included here, so take your pick. No doubt one of them is what Gallo was searching for.
Laurayne Lieberman writes that the ``Homecoming: Special Foods, Special Memories'' cookbook has become a favorite. ``And I have yet to find any recipe less than wonderful.''
