A cheese that retails for $18 to $25 per pound - highly acclaimed and selling fast - is being produced near Dodgeville by business partners who know how to challenge assumptions.

The cheese is not pasteurized, it is made in small batches, and it comes from the milk of cows whose diet is 75 to 80 percent live grasses.

The product - Pleasant Ridge Reserve - earned Best of Show honors, out of 684 entries, at this year's U.S. Championship Cheese Contest. It was the American Cheese Society's Best of Show in 2001, after its first year of commercial sales.
