Preparation time: 40 minutes. Cooking time: 30 minutes THE red onions in this flan give it a pretty delicate colour and complement the goats' cheese and thyme. It's perfect for a late summer lunch or supper, and best served warm with a crisp green salad.
INGREDIENTS
300g/11oz shortcrust pastry For the filling: 1 tablespoon olive oil 1 red onion, finely sliced 1 whole egg 1 egg yolk 150ml/1/4 pint single cream 1 teaspoon thyme finely chopped Salt and pepper 85g/3oz goats' cheese, crumbled
