A typical consumer eats 30 pounds of cheese per year, far more than the 6-pound annual average of 1944, mainly because many restaurants and eateries are including it in various dishes, according to USDA. About 20% or 35% of cheese consumption is through grocery stores, with the rest in various outlets--hotels, restaurants and fast food outlets, according to Don Blayney, a USDA economist, reported The Sacramento Bee (Aug. 23).
