The paradigm is dead--long live the paradigm. The "conventional" food industry is now the "health food" industry. Pogo was right, "Yep, son, we have met the enemy and he is us!"

As recently as a couple of years ago, the phrase "health food" was a joke in the conventional food industry, evoking images of left coast, tree-hugging longhairs eating nuts and berries, promoting "organic" and "natural" foods, rejecting proven scientific advances like hydrogenated oils and refined carbohydrates, and swallowing weird stuff like soy and milk with microbes purposefully grown in it.
