Pity the poor pear, doomed to stand in apples' shadow. Apples seem to get all the press, but pears have plenty to recommend them, too. They're attractive mounded in a fruit bowl, in shades of green, yellow, red and russet, and when caught at the perfect moment of ripeness, they offer the perfect balance of sweet and tart, tenderness and juice.
The problem - and maybe this explains why pears are a perennial bridesmaid - is that it can be a bit tricky to hit that perfect moment. Too soon, and you've got something astringent and rock-hard; too late, and you've got mush. The window is narrow and best found by buying pears a bit ...
