Observations and test results at the facility, collected on April 1, indicated that the firm's cooked and peeled crawfish tail meat, a ready-to-eat product, was found contaminated with Escherichia coli (E. coli). The warning letter also pointed out that unsanitary conditions in the peeling rooms and employees working in direct contact with food did not take necessary precautions to protect against contamination.
