After years of exploration by R & D teams from around the world, the source of natural cheese flavor was discovered by a team from Butter Buds Food Ingredients of Racine, WI. The expedition, which led to cheese making facilities in remote corners of the globe, finally ended in the company's own laboratory.
Expedition leader Bill Buhler said, "We suspected for years that the true source of cheese flavor wasn't in the block, brick or wheel, per se, but rather it was locked in the cheeses' fat."
