Caseino glyco macro peptide (CGMP), is a very useful protein. It has antithrombotic, antidiarrheal and antibacterial effects. It can also prevent the build-up of plaque on teeth. Usually, CGMP is obtained from animal milk using pepsin or rennet enzymes. But its usefulness is limited because of its short shelf-life: it rapidly begins to develop an unpleasant flavour. Societe des Produits Nestle, of Vevy, Switzerland, has been working on this problem.
Initial results showed that producing CGMP at lower pHs increased shelf-life. But ...
