In addition to its lactate products, Purac America now has available a range of gluconate products, with highly bioavailable mineral gluconates, such as potassium, calcium, zinc and magnesium, Purac offers a variety of fortification solutions for food products. Purac has also introduced its all natural GDL (glucono-delta-lactone), a slow release acidulant that has a minimal effect on organoleptic properties, according to the company. GDL is used in bakery foods as a chemical leavening aid, in dairy and soy as a controlled coagulator and in salads and dressings to acidify without adding sourness.
