What are the trends within the cheese category?
David Leonhardi: The biggest trend today is toward bigger, bolder flavors--aged cheeses and uniquely flavored cheeses, in particular. We're also seeing much greater interest in American-made specialty and artisan cheeses and many of our cheesemakers in Wisconsin are heading in this direction. This is a major shift in this country, as long-held perceptions have been that truly wonderful artisan cheese must be imported. American consumers are discovering the wide variety of high-quality cheeses made right here. Retailers that showcase these cheeses and promote them are generating strong sales. And, of course, ...
