Jerry Schill, 55, holds a knife in the kitchen of the tidy, suburban home he shares in New Bern, N.C., with his wife Pare.

Schill, who for 16 years has headed the North Carolina Fisheries Association, the state's largest trade and lobbying group for commercial fishermen, is wearing a spotless white apron. And at 10 a.m. on a day he doesn't plan to go to his office, he's already clean-shaven. He's cutting up ingredients for a dish he'll serve to lunch guests he'll entertain in a couple of hours.
