HUNGRY FOR SOMETHING to celebrate this week? Then how about heating up the stock pot, because this is National Split Pea Soup Week. The USA Dry Pea and Lentil Council recommends split peas because they are tasty, versatile, high in protein and low in fat. Also, they've been around for a long time, since Christopher Columbus is believed to have brought the first peas to America in 1493. The Council urges using split peas in a variety of soups, side dishes, and entrees where they provide important micronutrients like iron and phosphorus without any saturated fat or cholesterol.
