Years ago, Michael Bortz of Palmetto Grille sold fabulous chocolate chip cookies. I've been trying to get the recipe for years, and having just talked to him recently, he finally broke down the recipe for me.
Bortz now works at Denver Daily Bread, 105 E. Seventh Ave. (303-832-6300), in conjunction with Paradise Bakery. In testing the recipe at home and bringing them to work, I found that there are two camps of chocolate chip cookie lovers - crispy or chewy. Bortz's cookies are really crispy, which is difficult to do at home, unless you have a convection oven. I'll take crispy or chewy, but I lean toward chewy. Using his ...
