Dec. 31--One week after the first confirmed U.S. case of mad cow disease, many consumers appear to be feeling more confident than ever that beef is safe to eat.
Restaurants, grocery stores and meat markets surveyed Tuesday around Kansas City say they have seen little change in their customers' demand for beef. Fast-food chains also are reporting little impact on their sales nationally.
