California will soon capture the cheese crown from Wisconsin. The Golden State's supersize dairies overtook their rivals in milk output in the 1990s, and California already tops the charts in yearly production of butter, ice cream and nonfat dry milk powder. By 2005, it will surpass Wisconsin in cheese production as well.
