In my early 20s, my French mother-in-law set me straight about soup. Traditional French onion soup can cure a stomachache or a stuffy nose. Smothered with melted cheese gratineed golden over toasted slabs of French bread, soupe a l'oignon gratinee remedies winter woes. Spoons oozing with Gruyere, steaming with stock and caramelized onion turn melancholy to mirth.
Francoise said that in France, it's thought of as an elixir, much like Jewish chicken soup. Fondly, she recalled the soup made by the cook in her childhood home in Paris. The beef broth was made-from-scratch rich and augmented with beer.
