Quality in the marble. Demand for the most expensive kinds of beef is growing rapidly, according to Allen Brothers of Chicago, Ill., a purveyor of Prime beef and other fine meats that is trying to meet an eight-fold increase in demand for Kobe beef, which sells for as much as $100/lb., according to executive vice president Todd Hatoff.
