Creating an exquisite dessert is much like painting a picture: You need to know when to step away from the canvas. Bakers face the challenge of combining diverse flavors and textures, but occasionally they push a dessert right to the edge of the culinary cliff ... and lose their balance.
One of my favorite sweets, carrot cake, too often falls off the cliff. In an effort to craft the ultimate dessert, many bakers throw in everything but the kitchen sink.
This Americana classic boasts oil and pineapple for moisture and nuts, raisins and carrots for texture. Cinnamon and nutmeg spice up the taste while decadent cream cheese ...
