State cheesemakers were cheering record high prices for Wisconsin cheese and milk at a Madison trade show Wednesday, but they worried that the trend might shred long-term consumer demand.
"These are prices unheard of," said Robert Aschebrock, a cheese consultant and 50-year industry veteran who was among some 2,000 attendees at the 2004 International Cheese Technology Exposition at the Alliant Center Wednesday.
The coming days will offer a better chance to gauge consumer reaction to the higher prices for dairy products, which are quickly increasing at the retail level.
