salmon with horseradish sauce
Heat broiler. Sprinkle 44 oz. salmon fillets with 1 tsp. salt. Cook salmon 4 minutes, turning once. Remove from broiler, cool. Cover and chill. Spray a skillet with vegetable cooking spray and heat over medium heat. Add 1 cup chopped spinach and 1/3 cup each of chopped red onion and scallions. Cook 4 minutes. Cover and chill. In a small bowl, combine 1/2 cup plain nonfat yogurt, 2 Tbsp. Prepared horseradish, 1 tsp. each of chopped parsley and chives, and 1/8 tsp. each of white pepper and cayenne pepper; mix well.
