Consumer interest in nutritional information labels and ingredient lists has grown during the past three years, according to a new study by Mintel, a Chicago-based consumer intelligence firm. The three nutrition categories American shoppers care most about are fat, vitamins/minerals and calories. The popularity of the Atkins diet has pushed carbohydrates to fifth place on the consumer interest list from seventh. The study notes that with increased attention to ingredient labels, consumers may or may not purchase an item based on the presence of a particular vitamin or sweetener.
