LIGHT, CRUNCHY and packed with flavor, not carbs, pork rinds are shedding their redneck image while becoming an improbable diet food.
Weight watchers who can forgive fat and sodium if the carbohydrate count is right have adopted pork rinds as a new favorite salty snack.
Low carb diets - like Atkins and South Beach - have provided pork rinds their biggest popularity boost since the first President George Bush confided to the world that they were his favorite snack.
