Article: SPECIALTY CHEESE PRODUCTION GROWS.(BUSINESS)

The state's specialty cheese production grew to 302 million pounds in 2003 -- an 8 percent increase over the previous year, the Wisconsin Agricultural Statistics Service said Tuesday. Specialty cheese, which now accounts for 13 percent of the state's overall cheese production, is one of the few fast-growing sectors within Wisconsin's largely stagnant dairy industry. Some of the most popular varieties in 2003 included feta, Asiago and Hispanic cheeses.
