Apr. 27--From behind the wheel of an RV rolling west on Interstate 40 through the California high desert, Tennessee entrepreneur Eric Jackson is expounding via cell phone on his favorite topic -- the joys of kayaking.
"Kayaking is the most fun you can have on a given day. You are riding a liquid conveyor belt that runs through the most scenic parts of country. It beats the heck out of hiking and trying to see through the trees," Jackson said, as he pulled his recreational vehicle off the freeway to stop at a Dairy Queen.
