Poor cottage cheese: It gets no respect. For many Americans, the pebblelike curds suspended in a milky mixture conjures up images of diet food, or maybe food for the toothless, or perhaps to some not even food at all. Cottage cheese has gotten a bum rap, although admittedly, some of that is deserved. Still, when it is made well, it is unforgettable.

To cynics, the notion of a well-made cottage cheese sounds like an oxymoron. But those poor souls have probably never met a cottage cheese where the curds are like soft yet firm pillows, and their liquid companion is thick like a milkshake, made so by the addition of a touch of cream.
