Happily, I am both a cheese eater and a cheese educator. But I was not always the latter. When I set out to learn about cheese five years ago, I quickly found out that there were precious few resources about my beloved food. I soon discovered why. In America, we don't seek out much information about cheese because the bulk of the cheese we buy comes plastic-wrapped and portioned in individual slices. What's there to learn about that?
Fortunately, Americans are becoming more courageous with their cheese choices. With that expanded cheese horizon, questions naturally follow. People ask me, "How do I choose cheeses for a cheese board?" ...
