Forget the fact that mozzarella is made in the shape of a ball. In this country, it's a cheese that has two distinct sides: The "I love it" side, and the "It's boring" side.
Those in the first camp know that not all mozzarellas are alike. They know the ethereal nature of the silken round floating in a light saltwater solution. They know that a good mozzarella's power lies not in its punch, but in its subtlety. They know that with one bite, a good mozzarella will transport its taster to a place where fresh milk has just been converted to cheese, where the flavor and texture conjure up an image more like a savory ice cream than a cheese.
