Q: What are the rules for converting recipe times and temperatures for use in a convection oven? The manufacturer recommends reducing the temperature by 25 degrees, but says nothing about reducing the baking time. I've experimented with various baking times for different recipes with inconsistent results. I feel like I'm baking in the dark. _ E.C.

A: Unfortunately, you'll have to continue experimenting until you figure out the quirks of your model. But generally, you can either reduce the temperature by about 25 degrees or reduce the baking time by 25 to 30 percent. You can't do both.
