Although people enjoy them, most cooks are afraid to make fresh artichokes at home. Many think they are too difficult to trim, cut and cook from scratch. That's why I'm using canned artichoke hearts for these recipes. You can also use frozen. Someone gave me a huge can of artichoke hearts the other day and I wanted to create some unusual recipes, not your typical marinated Italian-style chokes.
Canned artichoke hearts are so simple to prepare and they don't really have a season so are good year-round. I thought I would offer you three ways to enjoy them.
