Sep. 10--At a time when the big ice cream chains have slowed down, Lee's Ice Cream is opening a new factory and has plans for ambitious growth. In a market where customized ice cream mixtures are the latest rage, Lee's is banking on the quality of its product. And in an age making ice cream is largely automated, Lee's believes in doing things the old fashioned way, adding ingredients by hand.
