When the heat hits, it's hard to think about cheese. Instead, our culinary imaginings usually turn to grilled foods, fruit salads and ice cream. But not all cheese is alike. Just as there are winter cheeses, such as Stilton and Vacherin, there are also summer cheeses.
Summer cheeses are ones that may be just right after a springtime stay in the aging room, such as the cylindrical goat cheese called a crottin, or they may be lighter on their feet, such as mozzarella or crescenza.
