One of the United States' finest native cheeses is made by men in overalls with hairnets looped under their chins to cradle their bushy beards. It isn't easy being Amish in a cheese house.
The beard-nets are standard in Ohio's Amish country, where most of the country's baby Swiss cheese is made. The mild buttery cheese was invented in Ohio, and some would argue that the best baby Swiss is still made amid the gently rolling hills of Tuscarawas and Holmes counties.
