Californians brag that they're just a year away from being the country's top cheese-producing state.
"After all, California surpassed Wisconsin as the largest milk producer 11 years ago and now leads the country in every other dairy category," declares the San Jose Mercury News, which describes Wisconsin as a state that "built its reputation mostly on commodity cheeses."
In a recent New York Times story, New England cheese makers are described as superior because they are more Europe-oriented.
