Believe it or not, there was a time _ not long ago _ when the words "chef" and "celebrity" were never linked, except perhaps in a society page photo of a grand personage posing with a shy-looking man wearing a tall toque in a banquet setting. In France, where the protocol and language for restaurant kitchens around the world were established, kitchen commanders were considered artisans, craftsmen who worked in hot hovels _ often anonymously. As chefs, they toiled a few steps from glamorous dining rooms, but in a social sense they were hidden in the shadow of a gregarious owner or maitre d'.
