Article: What are Oriental bread crumbs?

Byline: Jane Snow

Q: What are Oriental bread crumbs and where can I buy them? _ J.W., Akron, Ohio.

A: The only "Oriental bread crumbs" I can think of are panko bread crumbs. They are light, very crisp Japanese bread crumbs. The crumbs are larger and more jagged than regular bread crumbs. Many supermarkets sell panko crumbs. If your local market does not stock them, try a gourmet-foods store.

You also could make the crumbs yourself by whirling crusty white bread in a food processor until almost but not quite finely ground, then toasting the crumbs in the oven on a cookie sheet until crisp and dry.
