May 1--NEW HOLSTEIN, Wis.--When they switched from conventional to organic dairy farming, Jean and Richard Anhalt found a life.
"We know how much money we will be making. We can plan. We're making enough money that we can have a normal life," Jean Anhalt said. "I honestly believe organic farming would save some of the small farmers around here if they would give it a try."
The reason for her confidence is twofold: Organic milk brings higher prices.
And production costs are less than in conventional farming.
