Q: I found a recipe for tortellini soup and it calls for vegetable broth. What does that consist of? _ J.D., Ravenna, Ohio.
A: Vegetable broth is the vegetarian version of chicken or beef broth. It is made by simmering a variety of aromatic vegetables such as onions and carrots in water for hours.
You don't have to go to all that trouble, though. Vegetable broth is sold in cans in the soup aisle of the supermarket. Or, just use chicken broth instead.
