Apr. 3--Spell it bleu or spell it blue, its crumbles are a cheese of choice in Pueblo.
In fact, Larry Ambrose, manager of the Pueblo Convention Center, is convinced that Pueblo is "the blue cheese capital of the country."
He takes his own informal surveys everywhere he goes.
Even in Denver restaurants, he says, you can't universally find blue cheese crumbles, even if you ask for them.
But in Pueblo! Aah, he beams, it's everywhere, not only at Italian restaurants, but almost everywhere else, except some Mexican restaurants.
