Worth of bok choy no secret to San Bernardino County, Calif., farmers.

Aug. 11--A new kind of green is sending farmers to the bank in San Bernardino County.

Tucked in between freshly built houses, within a pitchfork's throw of the clogged freeways of Southern California, an unlikely cash crop grows.

From the eastern edge of San Bernardino to the Chino Valley, bok choy has become the most valuable vegetable in the county.

Even as Kin Liu pulls a folding knife from a pouch, bends and casually lops off a stalk from the carefully manicured rows of bok choy in his field, it's hard to imagine that this staple of Chinese cooking is anything more than a garnish on the agricultural platter.
