Participants in the National School Lunch Program do not have to worry about contracting bovine spongiform encephalopathy (BSE)--also known as "Mad Cow Disease"--because the infected cow never entered the program's food supply, according to an official at the American School Food Service Association (ASFSA).
Last month, a case of BSE was discovered in an adult cow in a slaughterhouse in Washington State. That slaughterhouse immediately recalled more than 10,000 pounds of beef, none of which was purchased for the program by the U.S. Department of Agriculture (USDA) for use in the National School Lunch Program.
