Demand for dairy products in China has risen dramatically in recent years and the government has set a goal of doubling the level of per capita urban milk consumption from 2004 through 2010. Over the past five years, per capita milk consumption has risen at a pace of 30 percent per annum, yet the average person consumes 13 kilograms of dairy products per year. That is still a fraction of the level in Japan where the average person ingests 75 kilograms of dairy products per annum.
