Ground beef makes up 44% of beef sales in the U.S., placing it as the single largest source of fat in the American diet. Basking in its popularity and versatility, ground beef has not been keeping pace with efforts to cut down on fat, even when it's labeled "lean" or "extra lean."
Although labeling reform promises to change that, the deadline for companies to comply with the new labeling regulations for meat and poultry has just been extended to May, 1994. Until then, detective work is in order if consumers are to decipher the meaning of ground beef labels.
