Healthful eating is essential for human development and well-being. In the United States today, some dietary patterns are associated with 4 of the 10 leading causes of death (coronary heart disease, certain types of cancer, stroke, and type 2 diabetes) (U.S. Department of Health and Human Services [DHHS], 2000). A healthful diet, however, can reduce major risk factors for chronic diseases such as obesity, high blood pressure, and high blood cholesterol (USDA & DHHS, 2000).
