Oct. 16--Wallace "Wally" Doolin, who has headed La Madeleine Bakery, Cafe & Bistro for more than two years, is leaving the Dallas-based chain to run the parent of the Buca di Beppo chain, the companies said Friday.
"It's difficult to leave the people at La Madeleine, but from a career standpoint, it's the right move for me at this point," said Mr. Doolin, who in recent months has sought to jump-start growth with a major expansion.
