Oct. 28--BILOXI, Miss. -- Brian Bush is one of the best brewmasters in the United States, but you won't hear him say it even though the majority of the beers on the menu at Beau Rivage's microbrewery are medal winners.

"My job is 90 percent cleaning and 10 percent brewing," he said. "I'm a janitor in many ways."

He keeps the copper-covered vats gleaming and spotless at the Coast Brewing Company, the microbrewery that Beau Rivage built at a cost of almost $1 million. But there's more to brewing beer than keeping the equipment clean.
